Blueberry Protein Muffins RecipeWhat’s better than a muffin?!  There isn’t a better comfort food that I can think of to be honest.  The problem is that they’re loaded with bad sugars, fats and carbs and aren’t exactly condusive to a healthy lifestyle.  This Blueberry Protein Muffins Recipe is definitely one to add to your list of high protein recipes if not your favorite cheat day foods!

Tens of thousands of you shared our last Blueberry Protein Muffins Recipe – which is funny considering this is a Fitness / Workout Gloves Blog!  Regardless, if you tried any of the recipes we share you know they’re frickin delicious.   We searched and tested (which is the best part) and found another recipe to share with you… this time there’s a video.

Blueberry Protein Muffins Recipe

Ingredients you’ll need to make about a dozen muffins:

3/4 Cup Rolled Oats

1/4 Flax Multi Bran Cereal

6 Egg Whites (3/4 cup)

Half scoop vanilla protein powder

1 Tbs Whole Wheat Flour

1/4 Tsp Baking Soda

1/2 Tablespoon Stevia Sugar Substitute

1 cup of Fresh Blueberries


 

  1. Combine all of these ingredients into a good food processor or blender.  This is probably going require about 10 minutes prep time in total.  They’re super easy!
  2. Spray non stick cooking spray into a muffins pan. (I prefer using paper muffin liners.)
  3. Instead of folding the blueberries into the batter, simply place 6-8 blueberries into the batter after you’ve put them into the muffins pan.
  4. In a preheated 350 degree oven bake your high protein blueberry muffins for about 20-25 minutes.  Just like with any recipe you should keep an eye on them, as cooking times and over temps can vary.

That’s about it!  Let them cool on a cooling sheet and they’re ready to eat.  I like making a batch or two of these and storing them in the freezer.  Depending how long you keep em in there, they really don’t freeze solid so you can take em out and chomp on em within a few minutes of taking them out of the freezer.
