High Protein Recipes made simple dimple. Healthy crock pot chicken recipes are a dime a dozen.  Even though they’re all high protein recipes because you’re using chicken, they’re not all that healthy for you.  Lot’s of the ones I’ve found incorporate lots of fats, creams, cheese etc.,   While they’re certainly delicious, they’re not the best meal option if you’re looking to lean out.  I love my crock pot and try to experiment with it as much as possible.  To be honest, I’m pretty sick of chicken and today I tried something different.  This is super simple and it was really good… it’s definitely going to be one of my go-to healthy crock pot chicken recipes!

Ingredients

1 Bag of Frozen Chicken Breasts

2 Cans of Whole Tomatoes

1 box of Pesto Basil Couscous

1 tsp Basil

Preparation

Trim all excess fat of the thawed chicken breasts and cut into 1 1/2 -2 inch size pieces.  Toss into the crock pot with 2 cans of whole tomatoes including the juice and the Basil.  Cook on high for 3-4 hours.  Prepare Pesto Basil Couscous as directed on package.   Serve chicken and tomatoes on top of the couscous.
