Where’s the Beef? Healthy Boneless Ribeye Steak Recipe

Vegans and vegetarians don’t know everything! Between the work and the gym, I have little time to stock my pantry so I focus on simple recipes that are quick to make.

Ingredients:

Grab your meat!  Pick up a Boneless Ribeye Steak that’s about 12 oz.

You’ll need 1/2 cup pineapple juice. Just buy a can of chopped pineapple, use the juice and save the fruit for a smoothie.

2 tablespoons of Soy Sauce.  You probably have packets in your kitchen junk drawer, but you really should stock low sodium soy sauce in your fridge.

Apple Cider Vinegar is great for digestion, I keep it on hand and put a tablespoon in 32 oz of water everyday.  You only need 2 tablespoons for this recipe.

1 tablespoon brown sugar

2 cloves of garlic, or use the jar of fresh minced garlic that you should keep in your fridge (and lasts forever.)

Mix all of the above ingredients in a large ziplock bag.  Be sure to zip the bag closed and massage the marinade to combine all ingredients well. Add your steak to the bag and massage again so that the marinade covers the meat.  The acidity of the apple cider vinegar and pineapple juice will act as a tenderizer for the steak.

Allow your steak to marinade for about 30 minutes.  That gives you time to grab the sweaty gym clothes and workout gloves out of your gym bag and toss them into the laundry.

I like to grill EVERYTHING I can!  On a hot grill, cook the steak for 4 to 6 minutes on each side if you like medium rare. I prefer well done so I go for about 8 mins on each side.  Allow the steak to rest covered with a plate or foil for 5-10 minutes so it reabsorbs the juices.

Serve with your favorite glass of red wine, and some roasted veggies and you’ve got a heart healthy and delicious post workout meal.
